Ingredients

  • 4 cups gluten-free all-purpose flour Use a high-quality blend that contains xanthan gum.
  • 1 cup granulated sugar For dough
  • 1 packet instant yeast 2 ¼ teaspoons
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup milk, warmed Ensure it is warm but not hot.
  • ½ cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar for filling
  • Optional fillings (e.g., cream cheese, fruit preserves) Customize as desired.

Icing Ingredients

  • 1 cup powdered sugar
  • 2 tablespoons milk For mixing icing.
  • As needed food coloring in purple, green, and gold For decoration.

Preparation

  • In a large bowl, mix the gluten-free flour, sugar, instant yeast, salt, cinnamon, and nutmeg together.
  • In a separate bowl, combine the warmed milk and melted butter. Let it cool a bit before adding the eggs and vanilla extract. Mix until smooth.
  • Pour the wet ingredients into the dry ingredients. Stir until well combined and a dough forms.
  • Cover the bowl with a damp cloth and let the dough rise in a warm place for about one hour or until it doubles in size.

Baking

  • Once risen, preheat your oven to 350°F (175°C) and grease a baking sheet.
  • Roll out the dough on a floured surface to a rectangle about 1/2 inch thick.
  • Spread your choice of filling evenly across the dough, leaving a small border around the edges.
  • Roll the dough tightly from one long edge to the other. Shape it into a ring by bringing the ends together, then pinch to seal.
  • Place the ring onto the prepared baking sheet and let it rise for another 30 minutes.
  • Bake for 25-30 minutes or until golden brown. Remove from the oven and let it cool.

Icing

  • Once cooled, mix the powdered sugar with milk until smooth to create the icing. Divide into separate bowls and color with food coloring.
  • Drizzle the icing over the cake in a festive pattern, using purple, green, and gold for a traditional look.

Notes
