Ingredients
  

For the crust

  • 2 cups gluten-free graham cracker crumbs Ensure they are gluten-free.
  • 1/2 cup unsalted butter, melted

For the filling

  • 2 cups cream cheese, softened At room temperature for better mixing.
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs Add one at a time.
  • 1 cup sour cream Can substitute with Greek yogurt.
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a medium bowl, combine the gluten-free graham cracker crumbs and melted butter, mixing until fully coated.
  • Press the mixture firmly into the bottom of the springform pan to create a solid crust and bake for 10 minutes.
  • Allow the crust to cool while preparing the filling.

Making the Filling

  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  • Gradually add the granulated sugar and mix until combined. Add vanilla extract and mix again.
  • Add each egg one at a time, ensuring fully incorporated before adding the next.
  • Mix in sour cream, lemon juice, and cornstarch until the batter is smooth.

Baking

  • Pour the cheesecake filling over the cooled crust and spread evenly with a spatula.
  • Bake for 50-60 minutes, until edges are set but center is slightly jiggly.
  • Turn off the oven, crack the door, and allow cheesecake to cool inside for about one hour.
  • Remove from oven and chill in the refrigerator for at least four hours, or overnight.
  • Remove the sides of the springform pan before serving.
