Ingredients
  

For the Gingerbread Bars

  • 1/2 cup butter, melted
  • 2/3 cup sugar
  • 1/3 cup brown sugar
  • 1 tsp vanilla extract
  • 1/3 cup molasses
  • 1 piece egg
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 3 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

For the Cream Cheese Frosting

  • 4 oz butter, softened
  • 4 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt (optional) for frosting

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 9x13 baking pan by lining it with foil.
  • Lightly spray the foil with cooking spray.

Mix the Wet Ingredients

  • In a large bowl, beat together the melted butter, granulated sugar, and brown sugar until fluffy, about 2-3 minutes.
  • Add in the vanilla extract and molasses, beating until well incorporated.
  • Crack in the egg and mix until thoroughly combined.

Combine Dry Ingredients

  • In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, ginger, nutmeg, and salt.

Mix Everything Together

  • Gradually add the dry ingredients to the wet mixture and stir until combined without overmixing.

Transfer to the Pan

  • Spoon the batter into the prepared baking pan, pressing it down evenly into the corners.

Bake

  • Bake the bars for 15-20 minutes, until firm but slightly undercooked.

Cool and Frost

  • Once cooled, prepare the frosting by mixing softened butter and cream cheese until fluffy.
  • Gradually add powdered sugar and vanilla, mixing until smooth.
  • Spread the cream cheese frosting over the cooled bars.
