Ingredients
  

Chicken and Broth

  • 2 pieces boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 tablespoons ginger, minced (fresh is best)

Noodles and Vegetables

  • 2 bundles ramen noodles
  • 1 cup bok choy, chopped
  • 1 piece carrot, thinly sliced
  • 2 pieces green onions, chopped for garnish

Garnish

  • Sesame seeds for garnish
  • Salt and pepper to taste

Instructions
 

Prepare the Chicken

  • Season the chicken breasts with salt and pepper. Heat sesame oil in a large skillet over medium-high heat.
  • Once hot, add the chicken breasts and sear them for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken and set aside.

Create the Ginger Glaze

  • In the same skillet, add minced ginger and sauté for about a minute until fragrant.
  • Pour in the chicken broth, soy sauce, and honey. Allow the mixture to simmer for 5 minutes.

Cook the Vegetables

  • Add the chopped bok choy and sliced carrots to the broth and let them simmer for about 5-7 minutes until tender.

Prepare the Ramen Noodles

  • Boil water in a separate pot and cook the ramen noodles according to package instructions, usually 3-4 minutes. Drain and set aside.

Combine and Serve

  • Slice the seared chicken into strips and return to the skillet with the broth and vegetables.
  • Add the cooked ramen noodles, mixing everything until noodles are coated in glaze.
  • Serve in bowls, garnished with chopped green onions and sesame seeds.

Notes

For a vegetarian option, substitute chicken with tofu or seitan and use vegetable broth. Customize with additional toppings according to preferences.
