Ingredients
  

  • 1/4 cup olive oil
  • 1 small shallot, finely chopped
  • 1 clove garlic, minced
  • 1/4 cup tomato paste
  • 1/2 cup heavy cream
  • 1 tsp red chili flakes adjust to taste
  • 1/2 lb pasta (shells or penne preferred)
  • 1/4 cup Parmesan cheese, freshly grated
  • salt and pepper to taste
  • 1 tbsp butter
  • fresh basil for garnish

Instructions
 

  • Heat olive oil over medium heat in a deep skillet. Add chopped shallots and cook until soft and translucent. Toss in minced garlic and stir until fragrant, about 30 seconds.
  • Stir in tomato paste and cook for 2–3 minutes until it darkens and caramelizes.
  • Add heavy cream and red chili flakes. Stir until sauce turns a warm blush color.
  • Cook pasta in salted boiling water until al dente. Reserve ½ cup pasta water, then drain pasta.
  • Add pasta to the skillet with the sauce. Pour in reserved pasta water a little at a time to loosen the sauce.
  • Stir in butter and Parmesan cheese until melted and silky. Season with salt and pepper to taste.
  • Serve immediately topped with fresh basil and extra Parmesan if desired.

Notes

For best flavor, don’t rush caramelizing the tomato paste. Use pasta water to achieve a silky sauce texture. Adjust chili flakes to your preferred spice level.
