Base Ingredients

  • 2 tablespoons butter For sautéing.
  • 1 onion chopped onion Adds sweetness and flavor.
  • 2 cloves garlic Minced for aroma and flavor.
  • 4 cups chicken or vegetable broth Vegetable broth for a vegetarian option.

Vegetables

  • 1 pound potatoes Peeled and diced.
  • 1 carrot diced carrot Adds sweetness.
  • 1 stalk celery Diced for flavor.

Protein

  • 1 cup smoked sausage Sliced for added flavor.

Cream and Seasoning

  • 1 cup heavy cream For creaminess.
  • to taste salt Adjust according to preference.
  • to taste pepper Adjust according to preference.
  • for garnish chopped chives Adds fresh flavor and color.

Instructions
 

Preparation

  • Melt 2 tablespoons of butter in a large pot over medium heat.
  • Add the chopped onion and minced garlic. Sauté for about 5 minutes until the onion is translucent.

Cooking

  • Pour in 4 cups of chicken or vegetable broth and bring to a gentle boil.
  • Add diced potatoes, carrots, celery, and sliced smoked sausage. Stir to ensure vegetables are submerged.
  • Once boiling, reduce heat to simmer and cook for 20 minutes until vegetables are tender.
  • Stir in 1 cup of heavy cream, then season with salt and pepper to taste.
  • Simmer for an additional 5 minutes to warm through.

Serving

  • Ladle soup into bowls and garnish with chopped chives. Serve with crusty bread.
