Ingredients
  

For the Cupcakes:

  • 2 large eggs
  • 1 1/2 teaspoons baking powder
  • 1 cup granulated sugar
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda

  • 1/4 cup 1/2 stick unsalted butter, softened
  • 1/4 cup vegetable oil
  • 1/3 cup sour cream
  • 2/3 cup whole milk
  • 1 tablespoon vanilla extract

For the Frosting:

  • 4 ounces cream cheese
  • 4 cups powdered sugar
  • 1 cup 2 sticks unsalted butter, softened
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Food coloring pink and blue, or customized as desired

Step 1: Gather Your Ingredients

  • and Tools Make sure you have all your ingredients and tools ready: a muffin tin, cupcake liners, mixing bowls, stand mixer, and a piping bag with a decorating tip.

Step 2: Prepare the Batter

  • Preheat Your Oven: Set your oven to 350°F and line the muffin tin with 16 cupcake liners.
  • Mix the Dry Ingredients: Combine sugar, flour, baking powder, baking soda, and salt in a large bowl.
  • Incorporate the Butter: Add softened butter to the dry ingredients and beat on low until it resembles a sandy texture.
  • Add the Wet Ingredients: In another bowl, whisk eggs, sour cream, oil, and vanilla. Slowly add this to the dry mixture, stirring until smooth.
  • Finish with Milk: Pour in the milk, mixing on medium speed until creamy and lump-free.

Step 3: Bake the Cupcakes

  • Spoon the batter into the cupcake liners, filling each about two-thirds full. Bake for 14–15 minutes, or until a toothpick comes out clean. Cool the cupcakes on a wire rack.

Step 4: Prepare the Frosting

  • Cream the Butter and Cream Cheese: Beat the butter and cream cheese together until light and creamy.
  • Incorporate Vanilla and Sugar: Add vanilla, then gradually mix in powdered sugar until smooth and fluffy. Add a pinch of salt.
  • Add Color: Divide the frosting into two parts and color one pink and the other blue.

Step 5: Assemble the Cupcakes

  • Core the Cupcakes: Hollow out the center of each cupcake.
  • Fill with Frosting: Pipe the colored frosting into the center of each cupcake.
  • Replace the Tops: Put the cupcake tops back on to cover the frosting.

Step 6: Decorate the Cupcakes

  • Pipe swirls or rosettes of white frosting on top of each cupcake. Add sprinkles or edible decorations for a festive touch.
