  • 1 pound boneless, skinless chicken breasts Use fresh chicken for best flavor
  • 1 tablespoon olive oil For sautéing
  • 4 cloves garlic, minced Freshly minced for best flavor
  • 1 medium onion, diced
  • 2 cups carrots, sliced Use fresh or frozen
  • 2 cups celery, chopped
  • 4 cups chicken broth Low sodium if desired
  • 1 cup heavy cream For creaminess
  • 1 cup grated parmesan cheese Freshly grated recommended
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped For garnish

Instructions
 

Preparation

  • Dice the onion, chop the celery, slice the carrots, and mince the garlic.

Sautéing

  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion and minced garlic. Sauté until the onion becomes translucent.

Cooking Soup

  • Add the sliced carrots and chopped celery to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables start to soften.
  • Place the boneless, skinless chicken breasts into the pot. Sprinkle with salt, pepper, thyme, and oregano.
  • Pour in the chicken broth, ensuring the chicken and vegetables are fully covered. Bring the mixture to a boil.
  • Once boiling, reduce the heat to low and cover the pot. Simmer for about 20-25 minutes, or until the chicken is fully cooked.
  • Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.

Finishing Touches

  • Stir in the heavy cream and grated parmesan cheese.
  • Allow the soup to simmer for another 5-10 minutes, stirring occasionally until the cheese has melted and the soup is creamy.
  • Taste and adjust the seasoning with additional salt and pepper if needed.
  • Serve hot with fresh parsley sprinkled on top for garnish.

Notes

For a thicker soup, whisk together a tablespoon of cornstarch and a tablespoon of cold water, then stir it in before simmering. Consider adding vegetables like spinach or kale for extra nutrition.
