  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1/4 cup chopped parsley
  • 4 cloves garlic, minced
  • 1/2 cup onion, finely chopped
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Italian seasoning
  • 1/2 cup ketchup (optional for topping)
  • 1 tablespoon olive oil (for greasing)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan with olive oil.
  • In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, milk, chopped parsley, minced garlic, chopped onion, egg, salt, pepper, and Italian seasoning.
  • Mix all ingredients together until well combined. Do not overmix, as this can make the meatloaf tough.
  • Transfer the mixture into the prepared loaf pan and shape it to fit snugly.
  • If desired, spread ketchup over the top of the meatloaf for added flavor.

Cooking

  • Bake in the preheated oven for about 50-60 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 165°F (75°C).
  • Once done, allow it to rest for 10 minutes before slicing. This helps retain moisture and makes slicing easier.

Notes
