Ingredients
  

For the Chicken

  • 4 pieces bone-in, skin-on chicken thighs
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup chicken broth

For the Mashed Potatoes

  • 2 pounds potatoes, peeled and cubed
  • 4 tablespoons butter
  • ½ cup milk
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

For the Glazed Carrots

  • 1 pound baby carrots
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, combine minced garlic, rosemary, thyme, salt, and pepper to create a herb mixture.
  • Pat the chicken thighs dry with paper towels and rub the herb mixture on both sides.

Cooking the Chicken

  • Heat olive oil in a large, oven-safe skillet over medium-high heat. Once hot, add the chicken thighs, skin-side down. Sear for 5-6 minutes until the skin is golden brown.
  • Flip the chicken and pour in the chicken broth, bringing it to a gentle simmer.
  • Transfer the skillet to the preheated oven and bake for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C).

Mashed Potatoes

  • While the chicken is baking, place the cubed potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring to a boil. Cook for around 15 minutes until soft.
  • Drain the potatoes and return them to the pot. Add butter and milk, mashing until creamy. Season with salt and pepper to taste.

Glazed Carrots

  • In another pot, combine the baby carrots, honey, lemon juice, and a splash of water. Cover and steam over medium heat for 10-12 minutes until the carrots are tender and glazed.

Serving

  • Once the chicken is finished, let it rest for a few minutes before serving. Plate the chicken alongside a generous scoop of mashed potatoes and the glazed carrots.

Notes

For best results, marinate the chicken overnight with the herb mixture for more flavor. Choose starchy potatoes for a creamier texture. Fresh herbs significantly enhance the overall taste.
