Ingredients
  

For the Marinade

  • 1/4 cup olive oil
  • 6 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste

For the Chicken

  • 4 boneless, skinless chicken breasts

Preparation

  • In a bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, chopped rosemary, thyme, parsley, salt, and black pepper until well combined.
  • Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that each piece is well coated.
  • Seal the bag or cover the dish with plastic wrap, then refrigerate for at least 30 minutes to allow the flavors to penetrate the meat.

Cooking

  • Preheat your grill or oven to medium-high heat. If using a grill, grease the grates lightly to prevent sticking. For oven roasting, line a baking sheet with parchment paper or lightly grease it.
  • Remove the chicken from the marinade, letting excess marinade drip off. Discard the leftover marinade.
  • Grill the chicken for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (74°C). If baking, place the chicken in the oven and cook for 20-25 minutes.
  • Once done, allow the chicken to rest for 5 minutes before slicing.

Notes
