Pasta Ingredients

  • 1 pound rigatoni pasta

Chicken Ingredients

  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 teaspoon salt for seasoning
  • ½ teaspoon black pepper for seasoning
  • 1 teaspoon Italian seasoning for seasoning

Garlic Butter Sauce Ingredients

  • 4 tablespoons unsalted butter 2 tablespoons for cooking chicken, 2 tablespoons for garlic sauce
  • 1 tablespoon olive oil for sautéing chicken
  • 4 cloves garlic, minced for the sauce
  • ½ cup grated Parmesan cheese for enriching the sauce
  • 1 tablespoon fresh parsley, chopped for garnish

Instructions
 

Cooking Pasta

  • Bring a large pot of salted water to a boil. Add rigatoni and cook until al dente according to package instructions.
  • Drain and set aside, reserving a cup of the pasta water.

Cooking Chicken

  • Season the cut chicken breasts with salt, pepper, and Italian seasoning.
  • In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
  • Once the butter melts, add chicken pieces in a single layer. Cook for 5-7 minutes or until golden-brown, without stirring.
  • Flip chicken and cook for another 5-7 minutes, or until fully cooked. Remove chicken from skillet and set aside.

Making Garlic Sauce

  • In the same skillet, add remaining butter and minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Combining Ingredients

  • Add cooked rigatoni and chicken back to the skillet. Toss everything to combine, adding reserved pasta water as needed to create a creamy sauce.
  • Stir in grated Parmesan cheese until melted and everything is coated. Adjust seasoning with additional salt or pepper if desired.
  • Remove from heat, garnish with fresh parsley, and serve immediately.

Notes

Serve with extra Parmesan cheese and a simple green salad on the side to balance the meal. Consider adding warm, crusty bread for soaking up the sauce.
