Instructions
Gather all ingredients and cut beef stew meat into bite-sized pieces. Halve baby potatoes.
Heat olive oil in a skillet over medium-high heat. Sear beef bites until browned on all sides.
In a small bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Whisk to combine.
Add browned beef and halved potatoes to the slow cooker. Drizzle with garlic butter sauce and pour in beef broth.
Cover and cook on low for 6-8 hours or on high for 3-4 hours until beef is tender.
Let rest for 10 minutes before serving. Garnish with fresh herbs if desired.
