Ingredients
Cookie Dough Ingredients
- 1 cup butter, softened to room temperature Make sure the butter is at room temperature for easy mixing.
- 1 cup sugar Regular granulated sugar.
- 2 large eggs Large eggs work best for binding.
- 1/2 teaspoon vanilla extract Pure vanilla extract is recommended.
- 2 1/2 cups all-purpose flour Sifted before measuring for best results.
- 1/2 teaspoon salt Regular table salt.
For Coating
- 1 cup rainbow sprinkles For rolling the cookie dough.

Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened butter and sugar. Using a hand mixer, blend them together until smooth and creamy.
- Add the eggs and vanilla extract to the butter mixture and mix until fluffy and well combined.
- Gradually add the flour and salt into the mixture, mixing on low speed until a cohesive dough forms.
Shaping and Baking
- Divide the dough into six equal portions and roll each into a long rope.
- Cut the dough ropes into 1-inch pieces and roll each piece in rainbow sprinkles.
- Arrange the coated cookie bites on a baking sheet lined with parchment paper, leaving space between each.
- Bake for 8-10 minutes until the bottoms are golden brown but the tops remain pale.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
