  • 1/2 cup almond butter or nut butter of choice Toast before adding for a richer flavor.
  • 1/2 cup cocoa powder Scoop gently to avoid packing.
  • 1/2 cup maple syrup or honey Either sweetener works.
  • 2 large eggs Substitute with flax eggs for a vegan version.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional) For added texture and flavor.

Preparation

  • Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
  • In a large bowl, combine the cooked and mashed sweet potatoes, almond butter, cocoa powder, and maple syrup. Mix until smooth.
  • Add the eggs, vanilla extract, baking powder, and salt to the mixture. Stir until fully incorporated.
  • If using, gently fold in the dark chocolate chips.
  • Pour the brownie batter into the prepared baking pan and spread evenly.

Baking

  • Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted in the center comes out mostly clean.
  • Allow the brownies to cool completely in the pan before lifting them out using the parchment paper. Cut into squares and serve.
