Base Ingredients

  • 2 cups cottage cheese Use quality cottage cheese for best flavor and texture.
  • 1 tablespoon honey or maple syrup Optional for sweetness.
  • 1 teaspoon vanilla extract

Toppings

  • 1/2 cup berries (fresh or frozen) Choose your favorite types.
  • 1/4 cup chopped nuts (almonds, walnuts, or pecans) Lightly toast for added flavor.
  • 1/4 cup seeds (chia, pumpkin, or sunflower) Lightly toast for added flavor.
  • A sprinkle of cinnamon Optional.

Instructions
 

Preparation

  • Prepare a baking sheet by lining it with parchment paper.
  • In a mixing bowl, combine the cottage cheese, honey or maple syrup, and vanilla extract. Stir until smooth and well-blended.
  • Pour the cottage cheese mixture onto the prepared baking sheet and spread it out evenly with a spatula to create an even layer.
  • Sprinkle your chosen toppings over the mixture, arranging them in an appealing way.

Freezing

  • Place the baking sheet in the freezer and let it freeze for at least 3-4 hours or until solid.
  • Once frozen, remove the bark from the freezer and break it into pieces to serve.

Notes

Store broken bark pieces in an airtight container in the freezer for up to 2-3 months. Layer parchment paper between pieces to prevent sticking.
