Cookie Ingredients

  • 1 cup unsalted butter, softened Use room temperature butter for easier creaming.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup graham cracker crumbs
  • 1 cup chocolate chips Mix of semi-sweet and milk chocolate can enhance flavor.
  • 1 cup marshmallow fluff

Frosting Ingredients

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar Adjust amount for desired sweetness.
  • 1/4 cup milk Use more or less for desired consistency.
  • 1 teaspoon vanilla extract
  • 1/2 cup marshmallow fluff

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, making sure to fully incorporate each egg, then add the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Fold in the graham cracker crumbs and chocolate chips gently.

Baking

  • Scoop tablespoon-sized portions of the cookie dough onto the prepared baking sheets, spacing them a few inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.
  • Remove the cookies from the oven and allow them to cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.

Frosting

  • While the cookies cool, prepare the frosting by beating the softened butter until creamy.
  • Gradually add the powdered sugar and mix on low speed until blended.
  • Add the milk, vanilla extract, and marshmallow fluff, then continue beating until the frosting is smooth and fluffy.
  • Once the cookies are completely cool, spread a generous layer of frosting on top of each cookie.
