Instructions
In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth.
Gently fold in the diced strawberries to the cream cheese mixture.
Spread a generous layer of the cream cheese mixture on two slices of bread. Top with the remaining slices to form sandwiches.
Set up a breading station with flour in one bowl, beaten eggs in another, and breadcrumbs in a third bowl.
Dredge each sandwich in flour, dip in beaten eggs, then coat with breadcrumbs, pressing lightly to adhere.
Heat oil in a skillet over medium-high heat. Fry each sandwich for 2-3 minutes per side until golden brown.
Remove from oil and drain on paper towels. Serve warm with whipped cream, if desired.
