Ingredients
  

For the tacos

  • 2 cups cooked street corn Use fresh or frozen corn, cooked and seasoned.
  • 4 tortillas tortillas Choose flour or corn based on preference.
  • 1 pound chicken breasts, cooked and chopped Leftover fried or rotisserie chicken can be used.
  • 1/2 cup jalapeño sauce Adjust the amount for desired spice level.
  • 1 cup shredded cheese Any cheese, such as cheddar or cotija.
  • 1/4 cup chopped cilantro Fresh cilantro for garnish.
  • 1 piece Lime wedges For serving.
  • Salt and pepper To taste.

Instructions
 

Preparation

  • Heat a skillet over medium heat and add the cooked, chopped chicken to warm through for a couple of minutes.
  • Pour the jalapeño sauce over the chicken and mix until well-coated.
  • Warm the tortillas in a skillet or microwave until pliable.

Assembly

  • Take a warm tortilla and add a generous scoop of the saucy chicken mixture.
  • Add a scoop of cooked street corn on top.
  • Sprinkle shredded cheese over the corn.
  • Add chopped cilantro and season with salt and pepper to taste.
  • Serve immediately with lime wedges on the side.
