Ingredients
  

For the mousse

  • 2 cups fresh raspberries Reserve a few for garnish.
  • 1 cup heavy cream Ensure it is very cold for whipping.
  • 1/2 cup powdered sugar Add gradually while whipping the cream.
  • 1 teaspoon vanilla extract Enhances the flavor.
  • 1 tablespoon gelatin Use unflavored gelatin.
  • 3 tablespoons water Used to bloom the gelatin.

Instructions
 

Preparation

  • Wash the raspberries gently under cool running water. Pat them dry with a paper towel and set aside a few for garnish.
  • Purée the remaining raspberries in a blender or food processor until smooth. Strain the purée through a fine mesh sieve to remove seeds, collecting the smooth raspberry sauce in a bowl.
  • In a small bowl, sprinkle the gelatin over the water and let it bloom for about 5 minutes. Microwave it for about 10 seconds until fully dissolved.
  • Mix the dissolved gelatin into the raspberry purée and stir until fully combined. Set aside to cool slightly.

Whipping the Cream

  • In a large bowl, whip the heavy cream using an electric mixer until soft peaks form.
  • Gradually add the powdered sugar, vanilla extract, and a pinch of salt while continuing to whip until you reach stiff peaks.

Combining

  • Carefully fold the raspberry mixture into the whipped cream with a spatula until no white streaks remain, taking care not to deflate the mousse.

Setting

  • Transfer the mousse into serving dishes or glasses. Chill in the refrigerator for at least 2 hours to set properly.
  • Before serving, garnish each portion with reserved raspberries.

Notes

To achieve the best results, make sure all ingredients are very cold. Use glass or metal bowls for whipping the cream. Be gentle when folding the raspberry mixture into the whipped cream to preserve the mousse's light texture.
