  • 1 cup unsalted butter, softened Use high-quality butter for the best flavor.
  • 3/4 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract Vanilla bean paste can be used for deeper flavor.
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon sea salt Adjust based on preference.
  • to taste optional flaky sea salt for sprinkling

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream the softened butter with both types of sugar until light and fluffy.
  • Add the egg yolk and vanilla extract to the mixture, and mix until well combined.
  • In another bowl, whisk together the flour, baking powder, and sea salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. Be careful not to overmix.
  • Shape the dough into a log and wrap it in plastic wrap. Chill in the refrigerator for at least 30 minutes to firm up.

Baking

  • Once chilled, remove the dough and slice it into rounds about 1/4 inch thick. Place them on the prepared baking sheet, leaving some space in between.
  • If you like, sprinkle a small pinch of flaky sea salt on top of each cookie.
  • Bake in the preheated oven for 12-15 minutes or until the edges turn lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
