  • 1 cup rice Use any preferred long grain or medium grain rice.
  • 4 cups beef broth Homemade broth is best, but store-bought works too.
  • 2 large onions, thinly sliced Yellow or white onions work well for caramelization.
  • 2 tablespoons butter For caramelizing the onions.
  • 1 tablespoon olive oil Helps caramelize onions and enhance flavor.
  • 1 teaspoon thyme Dried thyme can be used, or fresh for added flavor.
  • Salt and pepper to taste Adjust according to personal preference.
  • 1 cup grated Gruyère cheese Ideal for melting; alternatives can be used.
  • Fresh parsley for garnish Adds color and freshness.

Preparation

  • Heat the butter and olive oil in a large pot over medium heat.
  • Add the thinly sliced onions and stir occasionally, cooking until they are caramelized (about 20-25 minutes).
  • Once caramelized, sprinkle in the thyme, salt, and pepper, stirring to coat the onions evenly.
  • Add the rice and stir well to coat it with the onion mixture.
  • Pour in the beef broth, increase the heat to bring it to a boil, then reduce heat to low, cover, and let simmer for 18-20 minutes.
  • Check the rice for doneness, ensuring it’s fully cooked but not mushy.
  • Remove from heat and stir in the grated Gruyère cheese until melted.

Serving

  • Serve warm, garnished with fresh parsley. Can be served as a main dish or side.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat by adding a splash of beef broth if needed. For vegetarian options, use vegetable broth and omit any meat ingredients.
