  • Zest of 2 lemons
  • 1/4 cup freshly squeezed lemon juice
  • 1 1/2 cups all-purpose flour Measure using the spoon-and-level method
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
  • In a mixing bowl, combine the yogurt, sugar, and eggs. Whisk until smooth and creamy.
  • Add the vegetable oil, vanilla extract, lemon zest, and lemon juice. Mix well until everything is well combined.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gently fold the dry ingredients into the wet ingredients, stirring just until no flour streaks remain.
  • Pour the batter into the prepared cake pan and spread it evenly.

Baking

  • Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
