  • 4 large flour tortillas
  • 1 lb thinly sliced roast beef Choose high-quality for best flavor.
  • 1 cup Swiss cheese, shredded
  • 1/2 cup provolone cheese, shredded
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 cup beef broth For dipping.
  • Olive oil for brushing Enhances browning.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a small bowl, combine mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, and black pepper to create the spread.
  • Lay the tortillas flat and spread a thin layer of the spread on each.
  • Distribute sliced roast beef evenly over the tortillas.
  • Sprinkle Swiss and provolone cheese over the beef.
  • Add chopped parsley on top.
  • Roll each tortilla tightly and secure the ends if needed.
  • Brush the rolled tortillas with olive oil.
  • Cut the rolled tortillas into pinwheels or keep them whole on the baking sheet.

Baking

  • Bake in the preheated oven for 15-20 minutes, or until golden and crispy.
  • Meanwhile, heat the beef broth in a saucepan over medium heat.

Serving

  • Serve the roll-ups warm with the beef broth in small bowls for dipping.

Notes

For a vegetarian version, substitute roast beef with sautéed mushrooms and use your favorite cheese. Store leftovers in an airtight container in the refrigerator for up to three days.
