  • 2 large egg whites Make sure they are at room temperature.
  • 1 cup granulated sugar Add gradually while beating egg whites.
  • 1 teaspoon vanilla extract Feel free to experiment with other extracts.
  • 1 cup chopped nuts (such as pecans or walnuts) Can use different types of nuts as desired.
  • 1 cup chocolate chips Choose your favorite type of chocolate.
  • 0.5 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a clean, dry mixing bowl, beat the egg whites until soft peaks form.
  • Gradually add the granulated sugar while continuing to beat until the mixture is glossy and stiff peaks develop.
  • Gently fold in the vanilla extract, chopped nuts, chocolate chips, and salt until just combined. Be careful not to deflate the egg whites.
  • Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about an inch apart.

Baking

  • Place the baking sheet in the preheated oven, then turn off the oven immediately.
  • Leave the cookies in the oven for at least 5 to 6 hours, or overnight, allowing them to cool completely in the residual heat.
  • Once cooled, remove the cookies from the parchment and serve.

Notes
