Cookie Ingredients

  • 1 cup nut butter (like almond, peanut, or cashew) Choose smooth and creamy for best results.
  • 3/4 cup brown sugar or coconut sugar
  • 1 unit egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup chopped nuts or dried fruit Optional for added texture and flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the nut butter and brown sugar and stir until creamy.
  • Add the egg, vanilla extract, baking soda, and salt. Mix until smooth.
  • Fold in the chocolate chips evenly.
  • If using, fold in the nuts or dried fruit.
  • Drop spoonfuls of the dough onto the prepared baking sheet, spacing them a few inches apart.

Baking

  • Bake in the preheated oven for about 10-12 minutes or until the edges are golden.
  • Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For chewier cookies, slightly underbake and let them cool on the baking sheet.
