Firecracker Chicken Stir Fry

Ingredients
  

Chicken

  • 1 pound boneless, skinless chicken breasts or thighs
  • 2 tablespoons cornstarch For coating the chicken
  • Salt and pepper to taste
  • 2 tablespoons oil for cooking Can use vegetable oil or sesame oil

Vegetables

  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 cups broccoli florets
  • 1 cup snap peas Leave whole for crunch
  • 2 carrots, sliced
  • 2 green onions, chopped (for garnish)

Sauce

  • ¼ cup soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons sriracha sauce Adjust for spice preference
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • Red pepper flakes (optional, to taste) For extra heat

Instructions
 

Preparation

  • Cut the boneless, skinless chicken into bite-sized pieces and place in a bowl. Sprinkle cornstarch, salt, and pepper over the chicken, tossing to coat thoroughly. Marinate for at least 15 minutes.
  • Wash and chop the vegetables. Cut bell peppers into strips, slice the carrots, and separate broccoli into florets. Leave snap peas whole.

Cooking

  • Heat oil in a skillet over medium-high heat. Add marinated chicken and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Set aside.
  • In the same skillet, add more oil if necessary and toss in chopped bell peppers, broccoli, snap peas, and carrots. Stir-fry for 3-5 minutes until crisp-tender.
  • Return cooked chicken to the skillet. In a separate bowl, whisk together soy sauce, hoisin sauce, sriracha, honey, garlic, ginger, and red pepper flakes. Pour sauce over chicken and vegetables, stirring to coat evenly. Cook for an additional 2-3 minutes.

Serving

  • Serve hot over rice or noodles. Garnish with chopped green onions and sesame seeds.

Notes

Serve with fresh lime wedges on the side and keep extra sriracha for those wanting additional heat. Ensure the skillet is preheated for a good sear on the chicken.
