Chicken and Seasoning

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil for drizzling
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon cayenne pepper adjust to your spice preference
  • to taste Salt and pepper
  • 1 whole lemon (zested and juiced) for flavor
  • Fresh parsley for garnish for serving

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pat the chicken thighs dry with paper towels.
  • In a small bowl, mix the garlic powder, onion powder, smoked paprika, dried thyme, dried rosemary, cayenne pepper, salt, and pepper.
  • Rub the spice mix over the chicken thighs.
  • Drizzle olive oil over the chicken.

Searing and Baking

  • Heat a medium flame under an oven-safe skillet and sear the chicken thighs skin-side down for 5-7 minutes until golden brown.
  • Squeeze lemon juice over the chicken and sprinkle with lemon zest.
  • Transfer the skillet to the preheated oven and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for 5-10 minutes before serving.
  • Garnish with freshly chopped parsley before serving.
