  • 8-10 pieces corn tortillas
  • 2 cups cooked chicken, shredded (or any protein of choice)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced bell peppers
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 2 cups enchilada sauce (homemade or store-bought)

Spices and Seasoning

  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper

Garnish and Serving

  • Fresh cilantro For garnish
  • Sour cream For serving (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat a bit of olive oil over medium heat. Add the diced bell peppers and sauté for about 5 minutes until softened.
  • Stir in the shredded chicken, black beans, corn, cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes until everything is heated through. Remove from heat.
  • Pour about half of the enchilada sauce into the bottom of a baking dish, spreading it evenly.
  • Soften the corn tortillas by warming them in a skillet for about 30 seconds on each side or wrapping them in a damp paper towel and microwaving for about 30 seconds.

Assembly

  • For each tortilla, spoon a portion of the filling into the center and sprinkle with a bit of cheese. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat this process until all tortillas are filled and arranged in the dish.
  • Pour the remaining enchilada sauce over the rolled tortillas, ensuring they are well covered. Top with the remaining cheese.

Baking

  • Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  • Let the enchiladas cool for a few minutes before serving. Garnish with fresh cilantro and serve with sour cream, if desired.

Notes

Warm tortillas before filling to prevent tearing. Consider mixing different cheeses for added richness. Experiment with homemade sauce for a fresher flavor.
