Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together einkorn flour, baking soda, and salt.
  • In another bowl, cream together softened butter, brown sugar, and granulated sugar until smooth.
  • Beat in vanilla extract and the egg until well combined.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Gently fold in dark chocolate chips.

Baking

  • Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  • Bake for about 10-12 minutes or until edges are slightly golden.
  • Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack.
