  • 2 tablespoons olive oil For sautéing.
  • 1 teaspoon dried oregano For added flavor.

Instructions
 

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add the diced onion to the skillet and sauté until soft and translucent, about 3–4 minutes.
  • Stir in the minced garlic and red pepper flakes, cooking for another minute until fragrant.
  • Pour in the diced tomatoes along with their juices. Add oregano, salt, and pepper. Simmer the sauce for about 10 minutes.
  • Create small wells in the sauce with a spoon, and crack an egg into each well.
  • Cover the skillet and cook for 5–7 minutes, until egg whites are set, and yolks are still runny.
  • Remove from heat, garnish with fresh basil or parsley before serving.

Notes
