Ingredients
  

For the crust

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 3 tablespoons butter, melted Ensure butter is melted.

For the filling

  • 24 ounces cream cheese, softened Use three packages of 8 ounces each.
  • 1 cup sugar
  • 3 tablespoons all-purpose flour
  • 2 large eggs, room temperature, lightly beaten
  • 3/4 cup eggnog
  • 1/2 teaspoon rum extract
  • 1 dash ground nutmeg Freshly grated for best flavor.

Toppings (optional)

  • Whipped cream For serving.
  • Additional ground nutmeg For garnish.

Preparation

  • Grease a 9-inch springform pan. Wrap the pan with a double layer of heavy-duty foil to ensure a water-tight seal.
  • In a small bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press mixture firmly into the bottom of the springform pan.
  • Preheat your oven to 325°F (163°C) and bake the crust for 10 minutes. Let it cool on a wire rack.

Filling

  • In a large mixing bowl, beat softened cream cheese, sugar, and flour until smooth.
  • Add the beaten eggs to the cream cheese mixture and blend at low speed until combined. Do not overmix.
  • Gradually stir in eggnog, rum extract, and a dash of ground nutmeg.
  • Pour the filling over the cooled crust, smoothing the top with a spatula.

Baking

  • Place the springform pan inside a larger baking pan. Add 1 inch of hot water to the outer pan.
  • Bake for 45-50 minutes, until the center is just set and the top looks dull. Let cool on a wire rack for 10 minutes.
  • Loosen edges with a knife and let cool for another hour at room temperature.

Chilling

  • Wrap the cheesecake and refrigerate overnight to deepen flavors and enhance texture.

Serving

  • Top with a dollop of whipped cream and sprinkle with additional nutmeg if desired before serving.
