Ingredients
  

Dry Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour (or any flour of your choice)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup maple syrup (or agave syrup)
  • 1/2 cup almond butter (or any nut or seed butter)
  • 1 teaspoon vanilla extract

Mix-ins (optional)

  • 1/2 cup chocolate chips (or raisins)
  • 1/2 cup nuts (chopped) optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the rolled oats, almond flour, baking soda, and salt. Mix well.
  • In a separate bowl, combine the almond butter, maple syrup, and vanilla extract. Stir until smooth.
  • Pour the wet mixture into the dry mixture and stir until just combined. Fold in chocolate chips or nuts if using.

Baking

  • Scoop tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten each dough ball slightly with the back of a spoon.
  • Bake in the preheated oven for about 10-12 minutes, until the edges are golden brown.
  • Remove cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
