For the Dough:
- 1 egg
- 3/4 cup wholewheat flour
- 3/4 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup 1 stick cold butter, cut into pieces
- 1 tablespoon grated orange rind
- 3-4 tablespoons fresh orange juice
For the Prune Filling:
- 6 ounces pitted prunes
- 1/4 cup walnuts or almonds as an alternative
- 4 tablespoons strawberry jam
- 2 teaspoons grated orange zest
Step 1: Prepare the Dough
Beat the Egg: Start by beating the egg in a small bowl. Set it aside for later.
Mix the Dry Ingredients: In a food processor, combine the wholewheat flour, all-purpose flour, sugar, baking powder, and salt. Pulse a few times to mix.
Add the Butter: Add the cold butter to the dry mixture. Pulse until the mixture resembles coarse crumbs.
Add the Egg and Orange: Pour the beaten egg into the mixture along with the orange rind and fresh orange juice. Pulse again until the dough comes together into a soft, uniform ball.
