  • 4 pieces boneless, skinless chicken breasts Fresh chicken for best results
  • 1 cup sweet and sour sauce (store-bought or homemade) Choose a sauce with a balanced flavor profile
  • 1 cup pineapple chunks (canned or fresh) Fresh pineapple preferred for flavor
  • 1 piece bell pepper, chopped Add vibrant color and crunch

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts in the slow cooker.
  • Pour the sweet and sour sauce over the chicken.
  • Add pineapple chunks and chopped bell pepper on top of the chicken.

Cooking

  • Set the slow cooker to cook on low for 6-8 hours or on high for 3-4 hours.
  • Ensure the chicken is tender enough to shred with a fork once cooking time is up.

Serving

  • Serve over a bed of rice to soak up the sweet and sour sauce.
  • Garnish with chopped green onions or sesame seeds if desired.

Notes
