  • 2 cups diced fresh strawberries Use fresh strawberries for the best flavor.
  • 1 cup strawberry Jello
  • 2 cups Greek yogurt (plain or vanilla) Plain or vanilla Greek yogurt works best.
  • 1/2 cup boiling water Used to dissolve the Jello.
  • 1 cup cold water
  • 1 tablespoon honey or sweetener of choice Optional for extra sweetness.
  • to taste Whipped cream for topping Optional for serving.

Instructions
 

Preparation

  • Start by washing and dicing the fresh strawberries. Set them aside.
  • In a mixing bowl, add the strawberry Jello. Pour the boiling water over the Jello and stir until it completely dissolves.
  • Add the cold water to the Jello mixture and mix well.
  • In another bowl, combine the Greek yogurt with honey or sweetener if desired. Mix until smooth and creamy.
  • Once the Jello mixture has cooled slightly, fold in the diced strawberries.
  • Layer the Greek yogurt and Jello-strawberry mixture in individual serving glasses or bowls, starting with a layer of yogurt, then adding a layer of the Jello mixture, and repeat.
  • Finish with a dollop of whipped cream on top, if desired.
  • Refrigerate for at least 1 hour to allow the layers to set before serving.

Notes
