Preparation

  • Preheat your oven to 400°F (200°C). This ensures that your butternut squash will roast perfectly.
  • Toss the peeled and diced butternut squash in one tablespoon of olive oil, along with a generous sprinkle of salt and pepper.
  • Spread the mixture evenly on a baking sheet, ensuring enough space for each piece to roast properly.
  • Pop the baking sheet into the oven and let it roast for about 25 to 30 minutes, or until tender and slightly caramelized.

Cooking

  • While the squash is roasting, heat a large skillet to medium and add the remaining tablespoon of olive oil.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic and cook for about a minute until fragrant.
  • Introduce the ground turkey, breaking it apart with a spatula, and cook until browned and cooked through, about 5 to 7 minutes.
  • Sprinkle in the ground cumin and paprika, seasoning the mixture with salt and pepper.

Combining

  • Transfer the roasted butternut squash into the turkey skillet and mix gently to meld flavors.
  • Transfer the mixture to a serving dish, garnishing with fresh parsley. Serve warm.
