Ingredients
  

For the cookie dough

  • 1 cup peanut butter Creamy works best for smooth texture.
  • 1 cup brown sugar
  • 1 large egg Can be substituted with flaxseed meal or applesauce for a vegan version.
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips Can replace half with dark or white chocolate for variety.
  • a pinch salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the peanut butter and brown sugar, mixing until smooth.
  • Add the egg, baking soda, vanilla extract, and salt to the mixture and stir until fully combined.
  • Gently fold in the chocolate chips.
  • Drop rounded balls of dough onto the prepared baking sheet, spacing them about two inches apart.

Baking

  • Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden brown.
  • Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
