  • 1 lb chicken breast, sliced Use fresh chicken for best flavor.
  • 2 cups mixed vegetables (such as cabbage, carrots, and bell peppers) Feel free to customize with seasonal vegetables.
  • 2 tablespoons soy sauce Adjust to taste.
  • 1 tablespoon sesame oil Adds rich, nutty flavor.
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 4 large tortillas Can also use rice, approximately 2 cups cooked.
  • Green onions, chopped (for garnish) Adds a pop of color.

Preparation

  • Gather all your ingredients to streamline the cooking process.
  • In a large skillet, heat the sesame oil over medium-high heat.
  • Add minced garlic and ginger; stir for about a minute until fragrant.
  • Add sliced chicken breast to the skillet. Cook for 5-7 minutes, stirring occasionally, until browned and fully cooked.
  • Check that chicken reaches an internal temperature of 165°F.
  • Add mixed vegetables and soy sauce; stir to combine and cook for another 3-5 minutes until veggies are tender but crisp.

Assembly and Serving

  • If using tortillas, warm them briefly in a pan or microwave.
  • Spoon the chicken and vegetable mixture onto each tortilla and wrap them up, or serve over cooked rice.
  • Garnish with chopped green onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. For freezing, keep the chicken and vegetable mixture separate from tortillas.
