  • 4 pieces Flour tortillas (8-inch)
  • 1 pound Ground beef (or chicken/tofu) Substitute with preferred protein
  • 1 cup Refried beans
  • 1 cup Shredded cheese (cheddar or Monterey Jack) Can be mixed cheese varieties
  • 1 cup Salsa (store-bought or homemade) Use mild or spicy based on preference
  • 1 cup Fresh bell peppers, diced Colorful mix can be used
  • 1 cup Fresh onions, diced
  • ½ cup Fresh jalapeños, diced Adjust according to spice preference

Instructions
 

Preparation

  • Cook the ground beef in a skillet over medium heat, breaking it up as it browns.
  • Season the meat with salt, pepper, garlic powder, cumin, and chili powder.
  • Once browned, drain any excess fat.
  • In another pan or the oven, warm the flour tortillas until soft and pliable.

Assembly

  • Spread a layer of refried beans on each tortilla.
  • Add a portion of the cooked ground beef mixture.
  • Sprinkle shredded cheese on top.
  • Top with diced bell peppers, onions, and jalapeños.
  • Roll each tortilla carefully, tucking in the sides.
  • Place burritos seam-side down on a baking sheet and brush lightly with melted butter.

Baking

  • Preheat oven to 375°F (190°C).
  • Bake the burritos for 15 to 20 minutes until golden brown and crispy.
  • Let the burritos cool slightly before serving.

Notes
