  • 1 cup rolled oats
  • 1 cup nut butter (such as almond or cashew)
  • 1/4 cup honey or maple syrup Use maple syrup for a vegan option
  • 1 large lemon (zest) Use fresh lemon for best flavor
  • 2 tablespoons lemon juice
  • 1/4 cup poppy seeds
  • 1/2 cup protein powder (vanilla or unflavored)
  • pinch salt

Preparation

  • In a large mixing bowl, combine the rolled oats, nut butter, and sweetener. Mix thoroughly until you create a cohesive base.
  • Add the lemon zest, lemon juice, poppy seeds, protein powder, and salt to the oat mixture. Stir until everything is well combined.
  • If the mixture feels too dry, add a splash of water or more nut butter until you achieve a sticky consistency that can hold together.
  • Using your hands, take small portions of the mixture and roll them into bite-sized balls.
  • Place the rolled protein balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
  • Once chilled, transfer the protein balls to an airtight container and store them in the refrigerator.
