Cookie Ingredients

  • 1 cup peanut butter (smooth or crunchy) Use natural peanut butter with no added sugars.
  • 1 cup granulated erythritol or preferred low-carb sweetener Feel free to use other natural sweeteners like stevia.
  • 1 large egg Use room temperature for better mixing.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • a pinch salt (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  • In a mixing bowl, combine the peanut butter and erythritol until smooth.
  • Add the egg, vanilla extract, baking soda, and salt to the bowl, and mix well until all ingredients are fully incorporated.
  • Scoop out tablespoon-sized portions of the dough and roll them into balls. Place the balls on the prepared baking sheet, leaving enough space between each one.
  • Flatten each ball gently with a fork, creating a crisscross pattern on top.

Baking

  • Bake in the preheated oven for about 10-12 minutes, until the edges are slightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
