  • 1/2 gallon whole milk Use high-quality whole milk for best results.
  • 2 tablespoons plain yogurt with live cultures This serves as a starter for the yogurt.
  • to taste none salt Optional, for flavor enhancement.

Preparation

  • Pour the milk into the Instant Pot and close the lid. Make sure the steam release handle is in the sealing position.
  • Press the 'Yogurt' button and select the 'Boil' setting. The pot will heat the milk to eliminate unwanted bacteria.
  • Once it beeps, allow the milk to cool to about 110°F, which can take about 30-40 minutes.
  • In a small bowl, mix the plain yogurt with a few tablespoons of the warm milk until smooth.
  • Add this mixture back into the pot and stir gently.

Fermentation

  • Close the lid and ensure the valve is set to sealing. Press the 'Yogurt' button and set the timer for 8-10 hours.
  • After the timer goes off, carefully release the pressure and open the Instant Pot.

Draining and Serving

  • Scoop the yogurt into a clean container. If you prefer Greek yogurt, strain it through a fine mesh strainer over a bowl to let it drain for 1-2 hours in the fridge.
  • Once it reaches desired thickness, stir in salt if desired.

Notes
