Ingredients
  

Chicken and Vegetables

  • 4 pieces chicken breasts (boneless and skinless) Ensure even thickness for even cooking.
  • 2 medium zucchinis, sliced into half-moons
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 1 optional bell pepper, chopped Can also use a small eggplant, cubed.

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper.
  • Add the chicken breasts to the bowl and coat evenly with the marinade.
  • Toss in sliced zucchini and any optional vegetables, ensuring everything is coated thoroughly.

Cooking

  • Transfer the chicken and vegetables to a sheet pan, spreading them out in a single layer.
  • Bake in the preheated oven for 25 to 30 minutes, checking for doneness at an internal temperature of 165°F (75°C).
  • Allow the dish to cool slightly before serving.

Notes

To enhance flavors, let the chicken marinate for at least 15 to 30 minutes. Avoid overcrowding the pan for even roasting. Consider adding feta cheese or olives before serving for extra flavor.
