  • 2 cups diced leftover ham Use cooked ham
  • 4 cups diced potatoes Russets or Yukon Golds are recommended
  • 1 large onion, chopped Provides flavor base
  • 2 cloves garlic, minced Adds aroma
  • 4 cups chicken or vegetable broth Choose your preference
  • 1 cup heavy cream Adjust for desired creaminess
  • 2 tablespoons butter For sautéing
  • to taste Salt and pepper Season to preference
  • for garnish Fresh parsley Optional garnish

Preparation

  • Melt the butter in a large pot over medium heat.
  • Sauté the chopped onion and minced garlic until the onion is translucent, about 3-4 minutes.
  • Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat to medium-low and simmer until the potatoes are tender, about 15-20 minutes.
  • Stir in the diced ham and heavy cream, and cook until heated through, about 5 minutes.
  • Season with salt and pepper to taste.
  • Ladle the soup into bowls and garnish with fresh parsley, if desired.

Notes

This soup tastes even better the next day. Can be customized with veggies or spices. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months.
