  • 2 cups uncooked rice Use long-grain white rice or basmati rice.
  • 4 cups chicken broth Use high-quality for best flavor.
  • 1.5 pounds chicken breast, diced Frozen chicken can be used; just adjust cooking time.
  • 1 cup tzatziki sauce Can substitute with Greek yogurt mixed with herbs and garlic.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • Fresh dill or parsley for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large baking dish, combine the uncooked rice and chicken broth. Stir well.
  • Add the diced chicken breast, spreading it evenly over the rice.
  • In a separate bowl, mix the tzatziki sauce with garlic powder, onion powder, dried oregano, salt, and pepper. Combine well.
  • Pour the tzatziki sauce mixture over the chicken and rice, gently stirring to coat all ingredients.
  • Scatter halved cherry tomatoes across the top.
  • Cover the baking dish tightly with aluminum foil.

Baking

  • Bake in the preheated oven for 45 minutes.
  • Remove the foil and bake for an additional 15 minutes, until the chicken is fully cooked and the rice is tender.
  • Take the dish out of the oven and let it rest for a few minutes.
  • Before serving, sprinkle crumbled feta cheese, diced cucumber, and fresh herbs over the top.
