  • 1 cup pecan halves Use fresh pecans for the best flavor
  • 1 cup caramel candies Unwrap them for ease
  • 1 tablespoon heavy cream
  • 8 ounces semisweet chocolate, chopped or chips Choose high-quality chocolate for the best flavor
  • to taste sea salt Optional, for sprinkling

Instructions
 

Preparation

  • Line a baking sheet with parchment paper.
  • Preheat your oven to 350°F (175°C).
  • Spread the pecan halves on a baking sheet in a single layer and toast them for about 6-8 minutes, or until fragrant.
  • Remove the pecans from the oven and let them cool slightly.

Making the Caramel

  • In a small saucepan over low heat, combine the caramel candies with the heavy cream and stir until smooth and melted.

Assembling the Turtles

  • Place 4 or 5 pecan halves together in small clusters on the prepared baking sheet.
  • Spoon a generous amount of melted caramel over each pecan cluster.
  • Melt the semisweet chocolate in a microwave-safe bowl in 30-second intervals, stirring in between until fully melted.
  • Drizzle the melted chocolate over the caramel-topped pecan clusters.
  • Sprinkle with sea salt, if desired.

Setting and Serving

  • Chill in the refrigerator for about 30 minutes until the chocolate is fully hardened.
  • Once set, remove from parchment paper and serve or package as gifts.

Notes

Store in an airtight container. They can be kept at room temperature for about a week or in the refrigerator for up to two weeks. Bring to room temperature before serving for the best texture and flavor.
