  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder Use unsweetened cocoa powder for best results.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar For coating the cookies.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine granulated sugar and vegetable oil, mixing until smooth.
  • Beat in the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  • In another bowl, sift together flour, cocoa powder, baking powder, and salt.
  • Gradually fold the dry ingredients into the wet ingredients until just combined; do not overmix.
  • Cover the dough with plastic wrap and chill in the refrigerator for about 30 minutes.

Baking

  • Roll chilled dough into small balls, about 1 inch in diameter.
  • Roll each ball in powdered sugar until fully coated.
  • Arrange the balls on the prepared baking sheet with enough space between them.
  • Bake for 10-12 minutes until the edges are set and the centers are still soft.
  • Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes
