  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cherries, pitted and chopped (fresh, frozen, or dried) You can use any type of cherries.
  • 1/2 cup chopped nuts (optional) Nuts like walnuts or almonds work well.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Gently fold in the chopped cherries and nuts, if using, until evenly distributed throughout the dough.

Baking

  • Drop tablespoon-sized portions of the dough onto the prepared baking sheet, leaving space between each cookie.
  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Use fresh, frozen, or dried cherries. If using frozen cherries, thaw and drain them well to avoid excess moisture. Consider macerating chopped cherries in sugar for enhanced flavor.
