  • 4 large carrots, peeled and grated
  • 1 piece bell pepper (any color), diced
  • 0.5 cup green onions, chopped
  • 0.25 cup fresh parsley, chopped

  • 0.25 cup sunflower seeds

Dressing Ingredients

  • 0.25 cup olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup Maple syrup for vegan option.
  • 2 teaspoons grated fresh ginger
  • Salt and pepper to taste

Preparation

  • Peel and grate the carrots, and dice the bell pepper. Chop the green onions and parsley finely.

Mixing the Salad

  • In a large mixing bowl, combine the grated carrots, diced bell pepper, chopped green onions, chopped parsley, sesame seeds, and sunflower seeds.
  • In a separate small bowl, whisk together the olive oil, soy sauce, rice vinegar, honey or maple syrup, and grated ginger. Season with salt and pepper to taste.
  • Pour the dressing over the salad mixture in the large bowl. Toss everything together until well coated.

Final Steps

  • Let the salad sit for about 10-15 minutes to allow the flavors to meld together.
  • Serve chilled or at room temperature, garnishing with additional sesame seeds if desired.
